Ingredients for two medium size baking sheets:
- 3 heads of garlic
- Olive oil
- Sprigs of rosemary or thyme
- 3 bay leaves
- Crushed peppers or hot peppers of choice
Preparation:
- Separate the heads of garlic into individual cloves and cut one end off, but keep the skins on.
- Heat oil in a pot on medium, until you can drop in a pice of garlic and it sizzles
- Put in garlic, herbs and spices and turn heat to low.
- Allow garlic to simmer in oil for approximately 20 minutes but keep a close eye on it and remove from heat as soon as the edges of the garlic turn golden.
- Once cooled, pop each clove of garlic out of its skin and put into a sterilized mason jar for storage. Pour the oil and spices into the jar and keep in the fridge.
