A Garlic Confit Cutie

Ingredients for two medium size baking sheets:

  • 3 heads of garlic
  • Olive oil
  • Sprigs of rosemary or thyme
  • 3 bay leaves
  • Crushed peppers or hot peppers of choice

Preparation:

  1. Separate the heads of garlic into individual cloves and cut one end off, but keep the skins on.
  2. Heat oil in a pot on medium, until you can drop in a pice of garlic and it sizzles 
  3. Put in garlic, herbs and spices and turn heat to low.
  4. Allow garlic to simmer in oil for approximately 20 minutes but keep a close eye on it and remove from heat as soon as the edges of the garlic turn golden.
  5. Once cooled, pop each clove of garlic out of its skin and put into a sterilized mason jar for storage. Pour the oil and spices into the jar and keep in the fridge.
